The Churn
Gelato is fundamentally different from commercial ice cream. It is served slightly warmer, churned much slower to avoid injecting air, and contains less milk fat, allowing the true flavors of the pistachios, cocoa, or fresh berries to take center stage. Our Italian-imported batch freezers produce a dense silk-like texture that melts beautifully on the tongue.
